4 Ingredient Almond Joy Recipe



When my girlfriend, Mandie came over for my bachelorette party she was talking about these chocolate and coconut covered almonds she bought at Costco.  She was just raving how much she loved Almond Joys but always thought they should have more almonds which is why she loved these Costco almonds.  This got me to thinking about how easy it would be to make a stripped down Almond Joy recipe without all the garbage and extra sugar.



Grab your ingredients and steal away 10 minutes to whip up this super easy and scrumdiddlyumptious recipe!

Sweets Grocery List-
11/2 cups shredded coconut flakes, sweetened or raw
1 1/2 cups raw almonds
1 cup super dark chocolate bars or chips
1/2 teaspoon coconut oil



Place your double boiler on the stove on a low to medium low temperature.  Dump the dark chocolate chips in and add 1/2 teaspoon of coconut oil to add a little moisture to the extra dry chocolate.  


Keep a close eye on your chocolate because it does have a low cooking temperature and you don't want to overcook the chocolate causing it to become chalky and flavorless.  


In a medium sized bowl throw the almond and coconut flakes together.  


Once the chocolate is melted pour it on the other two ingredients in the middle sized bowl and mix.  


Once properly mixed up, spread everything out on a cookie sheet to cool off and dry.  


If you are impatient like me throw the cookie sheet in the freezer.  You should be ready to snack in just 15 minutes!!

Stripped Almond Joy on the Chill

Once cooled down break the mixture into bite size chunks.  Feel free to store them in a cool place.  I prefer the fridge.  I took this batch to work and my team ate it up in just two days.  One of the guys finished it for breakfast Friday morning!  Easy, minimally processed, fairly healthy and packs a real punch of flavor to the kisser!!
